      香菜拌牛筋

      原料:

      牛筋、香菜、蔥、姜、八角、酒、醬油、醋、辣椒粉、辣油、麻油、味精。

      做法:

      1. 將牛筋投入半鍋開水內燙煮1分鐘,撈出后切除皮膜及肥油等非筋部分,沖冷水洗凈;

      2. 燒熱1大匙油,煎香蔥姜后淋下酒及醬油,放下牛筋并注入開水6杯,用小火燒煮2小時至牛筋夠爛為止;

      3. 將牛筋夾出切成細條一寸長之小段;

      4. 在一只碗內調和麻辣料后,放入牛筋及煮牛筋之湯汁半杯,仔細拌勻裝盤;

      5. 加香菜,加鹽少許調味,即可上桌。
