      椒鹽軟殼蟹

      材料

      軟殼蟹2只(原只備用),黑胡椒碎1茶匙,鹽1茶匙,紅辣椒2只(切成小粒),蒜頭l茶匙(切茸),面粉2湯匙,炸油適量。

      做法

      (1)軟殼蟹用鹽及黑胡椒碎各1/2茶匙調味,然后沾滿面粉。

      (2)油鍋燒至大滾后放入軟殼蟹,用中火炸至兩面呈金黃色,取出備用。

      (3)將鍋中炸油倒出,剩余約l湯匙炸油,用大火將蒜茸、紅辣椒粒及余下的黑胡椒碎、鹽炒香,再把軟殼蟹回鍋炒片刻,即可上碟。

      小訣竅

      (1)軟殼蟹亦可選其他海鮮如九肚魚、白飯魚或中蝦代替,烹制方法相同。

      (2)軟殼蟹可在一些大型凍肉鋪預訂。
