      陽澄湖大閘蟹美食之蒜泥蒸大閘蟹

      陽澄湖大閘蟹做法之蒜泥蒸大閘蟹

      原料:陽澄湖大閘蟹2只,豆腐1塊

      調料:高湯,蒜泥,醬油,耗油,魚露,熟豬油,米酒,白糖,蔥,香菜。

      做法:

      1、解去縛住蟹鰲的草索,將陽澄湖大閘蟹洗凈后剝開蟹蓋,去鰓、臍,切成4塊,用刀排裂,蟹身也切4塊。

      2、蟹塊蘸上面粉,入油鍋炸成金黃色。

      3、豆腐切片,擺于盤內,再將蟹塊擺于豆腐上,蒜頭拍切成泥狀,香菜切碎,三者拌勻備用。

      4、鍋內放入少許油,加入蒜泥,蔥花,香菜,再加入高湯、米酒、醬油、耗油、白糖、魚露、熟豬油,煮成蒜泥醬汁,在淋在蟹肉身上,放入蒸籠蒸約5分鐘,熟后取出,擺上均勻的蔥花、香菜即成。
